Today, I decide to make some khao pia for breakfast. For those who don't know what khao pia is, khao pia is a noodle soup. khao pia is made with rice flour and tapioca flour. This noodle soup is one of my favorite and is easy to made. This soup is made with chicken and chicken broth. This soup is everyone favorite because whenever I went to over to my parents house, my mom always made them for dinner or for lunch. Sometime, when she want it, she would asked me and my sisters to made some for lunch. Khao pia is only good when is hot. When the khao pia is cold, the broth will be evaporated and there will only be the noodles left. As for me, I'm the only one that eat khao pia when I cooked them so I only cooked a small bowl for me. Below I will show some pictures that I took this morning while making khao pia.
What you will need:
1 16oz rice flour
1 14oz tapioca flour
boiling water
Using a pot, boil some water. The water has to be at boiling point so the flour can be cook through. In a bowl, pour the whole bag of rice flour and 3/4 of the tapioca flour and mix them. After the water is boiling, turn off the stove. Using a ladle, carefully mixed a couple of spoonful of hot water with the flour.
Mixed them well. You can used the rice flour bag as a glove since the water is hot. You need to turn the bag inside out to used it.
Knead the flour into dough. You can knead the dough in the bowl or on a clean surface.
Knead the dough until they are smooth.
Separated into pieces and roll it like the picture.
On a clean and dry cutting board, put a tablespoon of tapioca flour on the board and roll flat the dough. Continued to add more tapioca flour to the dough and board if it gets too sticky.
Roll flat the dough but don't make it too think or too thick.
When you finished rolling all the dough, stack three or four flat dough together and add a tsp of flour between them so they don't get stick together. Cut them into three part and stack them together and cut them.
After you finished cutting all of them, it should look like the pictures. Depending on how many serving you are doing, boil some water in the pot, add a lemongrass stalk and salt for taste. You can used pork or chicken for this soup but I preferred chicken. You can used whole chicken or chicken breast or any chicken part you like. I like to used chicken breast. Chopped the chicken into bite size or however size you want.
When the water is boiling, added the chicken in the pot. Also, put in a chicken bouillon for taste.
When the chicken is fully cooked, add in the noodles. On this one, I added a handful because this is a serving for one.
Stirred the noodles so it won't stick to the bottom of the pot. With just one serving, stirred for a couple minutes and until is boiling then turned off the heat.
Pour into a bowl and garnish with cilantro, green onion, black pepper and garlic chili pepper with oil. Add salt for taste. You can buy the garlic chili pepper with oil at the asian store near you. I preferred the garlic pepper that are homemade. Enjoy!!!!! If you have any question, feel free to ask me.
